Black Bean & Quinoa Salad

This is a wonderful plant based recipe, packed with protein and fiber.  It can be served as a side or main dish.

Cooking Time

~15 mins (to cook the quinoa)

Yields

4 servings

Ingredients

2 1/2c cooked quinoa
1-15oz can black beans
1c halved grape tomatoes
1/2 - 1 diced avocado
1c fresh cilantro or parsley
1/4c fresh lime juice
1/2t lime zest
2T olive oil
1 clove garlic
1/4t each salt & pepper




Directions

Sauce:  In a food processor, combine cilantro/parsley, olive oil, lime juice, lime zest, garlic and salt/pepper

Toss all ingredients in a large bowl and chill 15 minutes before serving.  This salad is even better the next day!

Notes

I like to double the sauce and save any extra for using on other grains during the week.
