Greek Salad Pita

I love this because you can pick and choose or add other ingredients.  There are dozens of variations!

This can be eaten as a deconstructed salad as well.

Ingredients

4 tbsp olive oil

2 tbsp red wine vinegar

1/2 tsp thyme

1 cup chopped grape tomatoes (or other variety)

1 cup chopped cucumber

1 cup chopped pepper (green/red)

2/3 cup chopped red onion 

1/4 cup chopped kalamata olives

½ cup chopped radishes

½ cup chopped fresh parsley

¾ cup feta cheese

1 sliced avocado (optional)

2-3 pepperincini peppers, sliced (optional)

2 Whole wheat or gluten free pitas

Directions

Stir together salad.  Salad will keep for 2 days.  Fill pitas when ready to eat.
