Buy organic kale in a bag if possible, it's less work then whole kale leaves. If you do get whole kale leaves, hold the end of the stalk and slide your hand up the stalk to peel off the leaf. Discard the stalk. Break the leaves up into smaller pieces.
This salad is massaged which is really important. Massaging the kale with citrus breaks down the tough fibers and makes it magically soft to eat!

4 servings depending on size of bag and if it's a main course salad or side dish
1 Bag organic (if possible) kale
Approx 2 Tbsp olive oil
Juice from one lemon
Sea salt
Optional:
Diced peaches, strawberries or mango
Mandarin orange segments
Slivered almonds or sunflower seeds
Empty the kale into a large mixing bowl. Remove stem pieces and tear leaves so they are a good size for eating with a fork. Add the lemon juice and olive oil. Using clean hands, vigorously massage the kale. You will feel as the fibers begin to change. Once it's at a consistency that is good for eating (try a leaf!), add your salt, fruit and nuts.
You are ready to enjoy! Get creative when you make this. It can be a main salad dish for summer with protein added on top.
