3-4 servings depending on size of salad
4 Tbsp fresh lemon juice (one lemon)
4 Tbsp olive oil
1 Tbsp whole grain mustard
small handful of fresh parsley (see notes)
salt to taste
Mix all of the above together using an emulsifier or food processor and enjoy! Store in a sealed jar in fridge.
Would also be great using basil or thyme in place of parsley. Fresh is best for this one!
