This recipe is adapted from an Allrecipes recipe I discovered. It is the most versatile, simple and delicious cake ever! And the fun part is, you probably have all the ingredients already! As always, my notes for adaptations are in brackets.

4 tbsp butter [can be regular or vegan]
3/4 c flour [regular or gluten free]
1/2 c sugar [you can also use agave or honey, I have already reduced the quantity from original]
1 tsp baking powder
1/4 tsp salt
3/4 c milk [dairy free works great too]
2 cups fruit [all berries are fantastic, add diced apple or banana for great flavor!]
Heat oven to 350. Put butter into an 8” square pan and set in oven to melt (this can be done while it’s heating up). Remove pan when melted.
Whisk flour, sugar, baking powder and salt in a small bowl. Add milk and whisk to form a smooth batter. Pour into the pan on top of the melted butter. Dump the fruit directly on top – you can spread it out but do not stir!
Bake until batter browns and fruit bubbles 50-60minutes. It will be wet, not firm. Serve warm or room temp.
Refrigerate leftover and keep for about 2 days.
