Roasted Brussels Sprouts with Pine Nuts and Dried Cherries

Ingredients

2 cups Brussels sprouts (remove ends and slice thinly or buy 'shaved')
¼ cup dried cherries
¼ cup pine nuts
2 tbsps olive oil
Sea salt, to taste
¼ cup grated Parmesan cheese (optional)

Directions

  1. Preheat oven to 375°F.
  2. Chop dried cherries into small pieces.
  3. In a mixing bowl toss brussels sprouts with olive oil, dried cherries, pine nuts, and salt.
  4. Transfer to baking sheet, ensuring the Brussels sprouts are in one layer, and roast for 30 minutes, or until golden-brown.
  5. Sprinkle with Parmesan and put under broiler for 3-5 mins if desired (watch closely!) and serve.

Notes

This is a base recipe.  You can add/substitute all but the olive oil.  Try different nuts, add garlic cloves, drizzle with balsamic vinegar at the end.  So many ways to vary the recipe.  You may want to adjust temperature or time depending on your oven and thickness of the brussels sprouts.
