Whole Grain Apple Muffins

12 large; 24 small

Ingredients

1 ¼ cup whole wheat flour or gluten free alternative

1 Tbsp baking powder

¼ tsp salt

½ tsp cinnamon

2 Tbsp agave nectar or brown sugar

2 cups Muesli style cereal w/raisins, dates, nuts, etc 

1 ¼ cup unsweetened plant milk or skim milk

1 egg or ¼ cup Eggbeaters

3 Tbsp canola or olive oil

3 peeled & shredded Golden Delicious apples (or a good baking apple)


Directions

Preheat oven to 400 degrees     

Use spray oil to prepare muffin pans.  

Mix together all dry ingredients.  In mixer, combine sweetener, cereal, milk, egg and oil and blend.  Add dry ingredients and mix well.  Add shredded apple and mix just until blended.

Put mixture into pans.  Cook for 20 mins – Makes about 24 regular size muffins or 12 large

Notes

This recipe is very low fat and low in sugar.  The apples and fruit from the cereal sweeten the muffin naturally.  The whole wheat flour is a great way to maintain the nutrients and gain the digestive benefits of a wholesome grain.  These freeze well too.
